This recipe is loved by thousands worldwide and yet this moist, sweet, quick bread is so easy to make! Plus what better way to use up those overripe bananas by mashing them into a bakers heaven!!

 

Ingredients :

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 table spoons egg replacer with 8 tablespoons of milk (soy/almond/coconut milk – whatever you prefer!)
  • 1 cup sugar
  • 4 very ripe bananas – (can also use frozen bananas, just be sure to defrost before use)
  • 1 teaspoon vanilla
  • ½ cup vegetable oil (I substituted with coconut oil)
  • 1 teaspoon cinnamon powder
  • Optional ingredients:
    • ¾ cup chocolate chips (milk/semi-sweet/white/dark)
    • ¾ cup chopped walnuts (can add/substitute with nuts of your choice)

Instructions :

  1. Preheat oven to 175 degrees CelsiusIMG_5026
  2. In a medium bowl combine:
    • flour
    • baking soda
    • baking powder
    • salt
  3. In a large bowl combine:
    • egg replacer and milk
    • sugar
  4. Stir in the following into the large bowl:
    • mashed bananasIMG_5025
    • vanilla
    • oil
    • cinnamon
  5. Stir in the medium bowl contents into the large bowl, a third at a time until just combined
  6. If adding optional ingredients, mix them in at this stage. I added chocolate chips and chopped walnuts until combined
  7. Divide the batter into two 9×5 loaf pans which have been sprayed with a non-stick coating
  8. Bake for about an hour
  9. When browned, stick a toothpick/knife into the loafs and check if the inside is baked completely – IMG_5029you’re toothpick/knife should come out clean without any batter stuck onto it – that’s when you know its done
  10. Remove from the oven and set aside to cool ~ 30 minutes – 1 hour
  11. When completely cooled, slide them out of the loaf pans and get ready to eat!
