Did you know that QUINOA is one of the most protein-rich foods we can eat! It is a complete protein containing all nine essential amino acids. Besides that it is rich in iron, magnesium, riboflavin, manganese and contains more fiber that most grains. What a super food!

Ingredients :

  • 3 Bell Peppers
  • ½ cup cooked Quinoa
  • Handful of sliced Mushrooms
  • Handful of chopped Spinach
  • 1 cup of Marinara Sauce or Tomato Sauce
  • 1 cup of crumbled Feta Cheese
  • 3 chopped Celery Stalks
  • 1-2 tablespoon(s) oil
  • Pinch of Salt
  • Pinch of Pepper

Instructions :

  1. Preheat oven to 180 Celsius and lay parchment paper on your baking tray
  2. Prepare your bell peppers for stuffing – you can either cut off the tops and clean out the seeds from the inside or you can cut them in half and keep the tops intact
  3. In a large skillet, add the oil on medium heat then add the mushrooms and celery stalks – stir until they soften, about 3-5 minutes
  4. When the vegetables are soft, toss in the spinach and cook until just wilted
  5. Next, turn off the heat over the skillet then add the feta cheese, marinara/tomato sauce, salt, pepper and quinoa to the vegetablesIMG_5470
  6. Take your mixture and stuff the bell peppers – place filled peppers on baking tray
  7. Bake for 15-20 minutes

This dish is best served fresh out of the oven. It is so nutritious and healthy and I’m confident that you’ll enjoy it as much as I have.
